Types of French Cooking

• Classical French Cuisine (A.K.A. Cuisine Bourgeoisie) - Consists of classical dishes which were regional at one time.  With

many dishes using cream based sauces, the food is very rich and filling.

• Haute Cuisine - This form of cooking is the classical dish taken to the extreme.  There is a strong emphasis on the presentation

of the dish.  The chefs even cut the vegetables to be uniform to the dish.  The food is generally rich and filling due to the use of

cream.  The meal ends up to be very expensive because of the use of the finest ingredients.

• Cuisine Nouvelle - This was created in the 1970s.   The dishes tend to be simple and light.  The preparations are generally

quicker and with an emphasis on local seasonings.  It has become a less popular way of cooking over the past few years.

• Cuisine du Terroir - This style of cooking focuses on local produce and herbs.  Regional specialties are used and is somewhat

rustic in nature.
